This classic meal combines tender chicken with fluffy dumplings, all simmered in a creamy, rich broth. It's perfect for chilly nights or family gatherings, making your kitchen feel like a cozy haven.

In this post, I'll guide you through each step to create a mouthwatering pot of Chicken and Dumplings, from gathering the ingredients to serving it hot. Let’s dive in!

Gathering Your Ingredients

Before you start cooking, it’s important to have all your ingredients ready. Gather the following items:

For the Chicken and Broth:

  • 1 tbsp olive oil

  • 2 lbs. bone-in, skinless chicken breast or thighs

  • 5 tbsp butter

  • 1 yellow onion, diced

  • 1 cup carrots, diced

  • 2 sticks of celery, diced

  • 3 cloves garlic, minced

  • 1 tbsp Worcestershire sauce

  • 1 tbsp hot sauce (Valentino’s hot sauce recommended)

  • 1/3 cup flour

  • 4 cups chicken broth

  • 1 ½ cups half-and-half

  • ¾ cup frozen peas

  • 1 tsp onion powder

  • ½ tsp each of dried thyme, parsley, rosemary, sage, salt

  • 1/8 tsp pepper

For the Dumplings:

  • 2 cups all-purpose flour

  • 2 tsp baking powder

  • ½ tsp baking soda

  • 1 tsp salt

  • ½ tsp garlic powder

  • 2 tsp sugar

  • ¾ cup cold sour cream

  • ¼ cup cold milk

  • 4 tbsp butter, melted

Cooking the Chicken

Start by heating the olive oil in a Dutch oven over medium-high heat, then add the chicken pieces. Cook them until they are golden brown on the outside, which usually takes about 5 to 7 minutes on each side.

While the chicken is cooking, mix your seasonings in a small bowl. This includes onion powder, dried herbs, salt, and pepper.

Once the chicken has a nice color and is cooked halfway through, remove it and set it aside. Melt the butter in the same pot. Make sure to scrape any browned bits off the bottom of the pot, as this adds depth to the flavor of your broth.

Next, add the diced onions, carrots, and celery. Cook these vegetables for about 5 minutes until they start to soften. Your kitchen should begin to smell heavenly!

After that, stir in the minced garlic, Worcestershire sauce, hot sauce, and the seasoning blend. Cook for an additional minute. This will allow the flavors to meld together, creating a fragrant base for your Chicken and Dumplings.

Building the Broth

Now it's time to create your broth. Sprinkle the flour into the pot, tossing it to coat the vegetables. Cook this mixture for a couple of minutes while stirring continuously to help the flour absorb the butter.

Gradually add the chicken broth, pouring it slowly while you stir. This method ensures no lumps form and results in a smooth mixture. Make sure to scrape the bottom of the pot to loosen any remaining bits.

Once the broth is well mixed, pour in the half-and-half in the same way. Stir in the frozen peas and bring your broth to a gentle boil. After it starts boiling, reduce the heat and let it simmer uncovered while you prepare the dumplings.

Preparing the Dumplings

In a separate mixing bowl, combine the flour, baking powder, baking soda, salt, garlic powder, and sugar. Mix these dry ingredients well to ensure an even distribution.

Next, add the cold milk, sour cream, and melted butter. Gently fold the ingredients together using a spatula until just combined. Be careful not to overmix, as this can lead to dense dumplings instead of fluffy ones.

Final Steps

Cut the chicken into bite-sized pieces and return it to the soup, along with any accumulated juices. This blends the chicken flavors into the broth.

Lower the heat just enough to keep the broth warm. If you’re using any leftover chicken, add it now so it can heat through.

Use a small cookie scoop or your hands to drop portions of the dumpling dough evenly over the soup. Spoon a bit of the broth over each dumpling so they can steam and cook properly.

Cover the pot tightly and bring it to a gentle simmer. Set a timer for 15 minutes - resist the urge to peek! This allows the dumplings to cook perfectly.

Serving Your Chicken and Dumplings

After 15 minutes, check the dumplings; they should be fluffy and have doubled in size. The comforting aroma of garlic, chicken, and herbs will invite everyone to the table.

To serve, ladle generous portions into bowls, ensuring each bowl contains chicken, vegetables, and several dumplings. This dish is best enjoyed hot, maybe alongside a simple green salad or fresh bread.
